Cosmic Cowboy Chili Recipe

Today is cold and rainy and the absolute perfect opportunity to use the crockpot and have supper ready and waiting for your loved ones when they get home! According to the Weather Gurus, we can expect the same type of weather for the next few days, so you’ll have plenty of time to give this one a try. We love it HOT here and think this recipe is especially great served over fresh hot cornbread! ENJOY!

Cosmic Cowboy Chili (serves 6-8)

3 lbs ground beef or venison
2-4 medium onions
2 garlic cloves, finely chopped
1 bell pepper, red or green, finely chopped
1 (16-oz) can tomato sauce
1 (16-oz) can whole tomatoes
2-4 T chili powder (or to taste)
3 tsp ground cumin
2 tsp ground oregano
2 bay leaves
1 tsp red cayenne pepper
45 drops red pepper sauce
1/3 cup jalapeno peppers, sliced, or to taste
2 (16-oz) cans dark red kidney beans

Brown meat with onions and garlic. Place in crock pot with rest of ingredients and cook on low for 4-6 hours. (ALTERNATE: Simmer ingredients in large Dutch oven, covered, at a very low temperature for at least 2 hours)

Serve with one or more of the following as garnish: chopped red onion, shredded Monterey Jack cheese, sliced jalapeno peppers
